Tabouli - Fresh and Healthy

The Great Healthy North African - Mediterranean Salad

This Tabouli Recipe (alternative spelling Tabouleh) is our version of the famous middle eastern/North African salad.

Some people don't use garlic, but we feel that it just doesn't taste right without it. It is a great accompaniment to all kinds of grilled meats and fish and is particularly good with our Falafel Recipe (Deep fried spiced Chickpea balls).

It's easy to prepare and the fresh Citrus and Herb flavours are Fantastic.
Ingredients
Tabouli - Tabouleh Healthy and Easy
  • 6 Tablespoons of couscous or cracked bulgar wheat (we prefer couscous)
  • 6 Tablespoons of boiling water.
  • A large bunch of flat leaf parsley.
  • 1 Small onion (finely chopped).
  • 1 Tomato - diced.
  • 1 Clove of garlic - mashed.
  • 1 Lemon - juice and rind.
  • 4 Tablespoons Olive Oil
  • Salt - chilli and black pepper to taste.

Method
  1. Place the couscous (bulgar wheat) in a glass bowl and add the boiling water.
  2. Stir it up and keep stirring until all the water has been absorbed.
  3. Leave to one side.
  4. Using a good sharp kitchen knife chop the parsley as finely as you can and then chop it some more. 
  5. The finer the parsley is the better the whole salad will taste. 
  6. Keep a little back for garnish.
  7. Now mix in all the other ingredients.
  8. Add to the couscous (bulgar wheat).
  9. Garnish with lettuce leaves and top with the rest of the parsley.
