skills on and produce a special
dish with
Mediterranean Prawns
- Langostinos
.
First make your
Pasta,
Rolling it out as thinly as you can - for a really delicate Ravioli.

Then cut out
discs of around
9cms./3.5" in diameter. We use the bottom of a drinking glass which
just happens to be exactly right. Make about 24 for four people.
Then the Prawns - uncooked, of course. About six per person.

Now - this is
what
you'll need and how to proceed.
Ingredients
for Four
People
- 24
Large Mediterranean
Prawns - Langostinos
- 24 Pasta discs.
- 2
Large cloves of Garlic
- thinly sliced.
- Chilli
Flakes.
- A
handfull of Flat Leaf
Parsley.
- One
lemon - juice of.
- Salt.
For
the Sauce.
- Three
or Four tablespoons
of extra virgin olive oil.
- Two
large tomatoes -
chopped.
- Two
Shallots - sliced.
- 6 - 8
Large Basil Leaves
- chopped.
- Salt
and Black Pepper

Method
- Lay the pasta discs on a flat surface and place
a
curled Prawn on each one.
- Lay a sliver of garlic - a
sprinkle of chilli
flakes
and a sprinkle of parsley on each Prawn.
- Top with a squeeze of lemon juice and a little
Salt.
- Brush a little water around the edge of each
disc.
- Fold over the prawn on each disc making sure
that the two edges are properly sealed to make semi-circular
Ravioli. Just give the edges, all the way round, a gentle
squeeze.
- Meanwhile make the sauce - gently cook the
shallots
in the oil until soft and then add the chopped tomato, basil, salt and
pepper to taste.
- Stir for one minute and remove from the heat.
- Boil the pasta in a large pot of salted water
for 2-3
minutes - depending on the thickness.
- Drain and arrange in warm pasta
bowls.
- Spoon over the sauce and serve straight away.
