Frittata
Recipe
We have added chorizo to our Frittata Recipe because it gives a great
flavour....but you can leave it out and it is still delicious.
Whenever we make this we eat it for lunch hot that day...and the next
day cold....its yummy either way. We find that it makes a change from
Tortilla....as it contains a lot of different ingredients. Its one of
those handy dishes that you can raid the fridge for, so you can make
your own version with whatever you can find!

Add
another tbsp. of olive oil to the pan and then the potatoes - turn the

- Remove from pan.
- Add a final tbsp. olive oil to the pan and then
the remaining vegetables and chorizo.

over a medium heat until the vegetables have softened.
Season the eggs with salt,
black pepper and the herbs and lightly whisk.
- Add the potato and onion mixture to the pan and
stir well.
- Pour the egg mixture evenly over the top and
cook over a low heat for about 10 minutes, until it's set and just a
little runny on top.
- Sprinkle over the grated cheese, then pop it
under a hot grill for about 3 mins, until the egg has cooked and the
cheese has turned golden brown.
