Salad RecipeEnsalada
MixtaThis Spanish Salad recipe is really easy, totally
authentic, so healthy, and really
delicious. Whenever we go to any of our favourite local
Spanish  restaurants, we always have their Ensalada Mixta to
share as a sort of
starter.The basic recipe stays the same, but changes according to what
is in season. Because all of the produce is grown around the local area
and is really fresh (including the free range eggs) the taste is
amazing.

Salad Ingredients For 2 People
 
 
1 Romana lettuce (Romaine) or Cos, chopped
roughly1 small sweet onion, cut in half lengthways and
thinly sliced2 tomatoes. roughly chopped1 small cucumber, roughly chopped2 heaped tablsp. sweetcorn kernals1 small carrot, peeled and grated1 large kiwi, peeled and sliced1 small orange, peeled and slicedA small can of tuna, drained2 hard boiled eggs quartered New

Take a large dinner plate and arrange the
lettuce over the base.Sprinkle over the onion, tomatoes, cucumber.Then the sweetcorn and carrot.Arrange the kiwi and orange slices around the
edge of the salad.Flake the tuna over the top of the salad and
finish with the egg quarters.The Spaniards usually dress their Ensalada
Mixta with olive oil and wine vinegar plus a little salt and
pepper. Or if you like you can dress it with our own Vinaigrette Recipe
