Poached Salmon Recipe


A Great - Healthy - Poached Salmon RecipeThis is the easiest poached salmon recipe using a fish that is very popular in all Mediterranean countries.
It's great for a dinner party as it takes so little time and effort to prepare, but is absolutely delicious.
Salmon is a great fish for poaching, as the fillets have really firm flesh, and are easy to deal with.
It is also widely available and reasonably priced.
A good Mediterranean Diet stand by.
Eat well - feel full and satisfied and lose those excess pounds without undue effort.

Mediterranean Diet Poached Salmon Recipe

Poached Salmon Recipe Ingredients
For 2 People
  • 2 salmon fillets, (approx 225g each) skinned and boned 
  • 125ml glass of white wine
  • Salt and black pepper to taste
  • 50ml water
  • 1 teaspoon fresh dill roughly chopped, or use dried
  • 125g low fat creme fraiche... or if you prefer use cream
  • 1 level teaspoon dijon mustard
  • 1 level teaspoon honey
  • 1 flat teaspoon cornflour/cornstarch slaked with a little water for thickening

Poached Salmon Recipe Method
  1. This is really quick and easy! Take a non stick fry pan, and pour in the wine and water, add the dill, salt and pepper. Place the salmon fillets into the pan.
  2. Bring to the boil over a medium heat, and allow to simmer for 3 minutes, turn the fillets over and simmer for a further 3 minutes.
  3. Remove the fillets from the pan and keep warm.
  4. To make the sauce: place the pan back on to a medium heat, whisk in the cream or creme fraiche, the mustard and honey and bring to the boil.
  5. Turn down the heat to medium and add a little of the slaked cornflour mixture to thicken the sauce to a smooth pouring consistency.
  6. Arrange the fish on plates and pour the sauce over.
  7. Serve immediately with potatoes and vegetables of your choice.
