Poached Salmon Recipe Poached Salmon Recipe Ingredients * 2 salmon fillets, (approx 225g each) skinned and boned * 125ml glass of white wine * Salt and black pepper to taste * 50ml water * 1 teaspoon fresh dill roughly chopped, or use dried * 125g double cream/or for a healthier option use 125g low fat creme fraiche or equivalent * 1 level teaspoon dijon mustard * 1 level teaspoon honey * 1 flat teaspoon cornflour/cornstarch slaked with a little water for thickening Poached Salmon Recipe Method 1. This is really quick and easy! Take a non stick fry pan, and pour in the wine and water, add the dill, salt and pepper. Place the salmon fillets into the pan. 2. Bring to the boil over a medium heat, and allow to simmer for 3 minutes, turn the fillets over and simmer for a further 3 minutes. 3. Remove the fillets from the pan and keep warm. 4. To make the sauce: place the pan back on to a medium heat, whisk in the cream or creme fraiche, the mustard and honey and bring to the boil. 5. Turn down the heat to medium and add a little of the slaked cornflour mixture to thicken the sauce to a smooth pouring consistency. 6. Arrange the fish on plates and pour the sauce over. 7.
