Spread softened butter evenly over the base of a the Skillet/Tarte Tatin Pan , and sprinkle the sugar on top. 3. Place apples in concentric circles cut size up, half them for the centre to fill any gaps. 4. Put pan over very low heat so that the butter and sugar melt very slowly, roughly 10 minutes. 5. Increase the heat slightly to caramelise the sugar, shaking the pan occasionally to stop sticking. 6. Pre heat the oven to 220C/Gas Mark 7. 7. Roll out the puff pastry so that in fits over the top of the pan, allowing some to tuck down the edge. 8. Prick the pastry all over with a fork. 9. Bake in the oven for 20 - 25 mins until crisp and golden. 10. Remove from oven using strong oven mitts and allow to stand for about 5 minutes. 11. Take a plate that is larger than the circumference of the pan. 12. Remember the pan is very hot so be careful with this next step. Put the plate over the top of the pan. 13.
