Minestrone Soup Recipe Ingredients for Four People One large onion finely chopped. 4 cups/500ml. vegetable or beef stock - or use a good quality stock cube. 4 Cloves of garlic - crushed. 4 ozs./100g. of carrot chopped. 4 ozs./100g. of red bell pepper chopped. 4 ozs./100g. of cellery chopped - with the leaves chopped seperately. A 16 oz. can of chopped tomatoes. A 16 oz. can of white beans. 4 ozs./100g. of fresh spinach - chopped. 4 ozs./100g. of multi coloured pasta. 2 oz/50g. of Parmesan - grated 2 tbls. of Olive oil. A Bunch of parsley - chopped 1 tsp. of dried oregano. Salt and pepper. For the meat eaters - 4 ozs./100g. of sausage or chorizo. Minestrone Soup Recipe Method Heat the oil in a pan and add the onions, carrot, red pepper and celery. Sweat for ten minutes until soft. Add the garlic and cook on low for two more minutes. Now add the stock and tomatoes and cook for twenty minutes. Then the pasta, cooking for a further twenty minutes. OK - check for seasoning and add the beans, parsley, celery leaves and spinach.
