Avocado Recipe Avocado Recipe Ingredients For 2 People * 1 large ripe avocado * 1teasp lemon juice * 250 g/9oz tuna, drained * 1tablsp finely chopped onion * 1 tablsp finely chopped tomato * 3 tablsp vinaigrette dressing recipe * A pinch of salt and a ginding of black pepper * Salad leaves, chopped parsley and tomato slices to garnish Avocado Recipe Method 1. Cut the avocado in half lengthways and remove the stone. 2. To help them sit safely on their serving plates, take a thin slice off the bottom of the rounded underneath side of each half. 3. Rub the lemon juice evenly over the surface of each avocado so that they will not go brown, and put them into the middle of each plate. 4. In a mixing bowl evenly combine the tuna, onion and tomato with 2 tablsp of the vinaigrette dressing. 5. Add salt and black pepper to taste. 6. Divide the mixture between the two avocado halves in a neat pile. 7. Garnish with the salad leaves, sliced tomato and parsley. 8.
