Fish Recipe Baked In The Oven With Mediterranean Herbs
and Spices -
Really Quick and Easy
This Mediterranean
whole fish recipe is delicious, moist, succulent and hard to
beat. If you struggle to cook fish then you need to look no
further than your oven. Not only is this cooking method ideal for fish
of all sizes, but it also lets you infuse it with a variety of
additional flavours.
Oven baking is also a much healthier way to cook it, making it a great
alternative to the traditional fried methods. For a celebratory, yet
very easy, meal..... try roasting a whole large fish. It only takes a
little
preparation, and serving it up whole to a table of friends is an
impressive meal that will have them talking about for a long time
to come.

Fish Recipe Ingredients for Four People
1 large
snapper or simular type of fish, about 3 1/2 - 4 lb or 1 1/2 - 2 kilos.
Have the fishmonger gut, clean and descale it for you.
Salt
and ground black pepper to taste
4 fat cloves of garlic very finely sliced
2" piece of fresh ginger finely grated
1/2 teaspoon chilli
The finely grated zest and juice of 2 limes
A handfull of roughly chopped fresh coriander
A handfull of pine nuts
A little extra virgin olive oil
This
recipe can really be used for any whole fish....you can also use it for
the smaller ones that would be a good size for individual servings.

Wash the fish well, inside and out, under the
tap and dry off
with kitchen paper.
Line a large oven tray, big enough to hold it,
with cooking foil and grease well with some of the olive oil.
Lay the fish on the tray, open it up where it
has been cleaned, and
season with salt and ground black pepper.
Then evenly stuff the inside with the garlic,
ginger, chilli, lime zest and juice, 1/2 the pine nuts and 3/4 of the
coriander.
Close the fish up and sprinkle the remaining
coriander and pine nuts on top.
Finish with a drizzle of olive oil over the
whole of the fish and a little extra seasoning.
Put the fish, uncovered, into the oven at
190ºc/375ºf for 45 minutes. Turn the oven off and leave the fish in for
a further 15 minutes.
To serve, remove the fish from the tray on the
foil, sliding it off the foil on to a serving platter pouring over the
cooking juices. Garnish with lime wedges
and fresh
coriander leaves and serve immediately.
