 Tomato Sauce Recipe 



Fresh Homemade Mediterranean Tomato Sauce

Easy Fresh and Tasty

Develop your own best fresh tomato sauce recipe and always be sure what, exactly, is in it. You can't be too carefull these days and it is so quick and easy to make that it would be a shame to buy something that's bound to be inferior. It can also give a great deal of satisfaction to produce, fresh healthy Mediterranean food easily and quickly, from best quality ingredients.




Ingredients to make 1 Quart Approx.

  • 1 Kilo/2.2lbs. of fresh Mediterranean tomatoes chopped, or 2 Sixteen ounce cans of whole plum tomatoes in juice
  • 1 Large onion - chopped
  • 6 Cloves of garlic - chopped
  • 1 Lemon -  juice of 
  • 1 pint of good vegetable stock or 1 vegetable stock cube
  • A bunch of fresh basil leaves or 1 tablespoon good quality dried basil
  • 2 Tablespoons fresh parsley
  • 1 box of Spanish Tomate Frito or 3 Tablespoons double concentrate tomato pure
  • 3 Tablespoons extra virgin olive oil
  • 3 Bay leaves
  • Salt and freshly ground black pepper to taste

Method

  1. OK - First Fry off your onion in the olive oil on a medium heat until soft.
  2. Then - reduce the heat and add the garlic.
  3. Cook for a further five minutes stirring.
  4. Add the chopped tomatoes to the mix - or:
  5. Open the Cans of Tomatoes and pour the juice into your mixture.
  6. Roughly chop the tomatoes in the can with a sharp knife.
  7. Now add them to the mixture.
  8. Add the Rest of the ingredients and cook on a medium heat for 30 minutes, stirring occasionally
  9. Take out the bay leaves and discard
  10. Whizz the tomato sauce in a food processor or blender until it is fairly smooth.
  11. That's it - Great Tasting Tomato Sauce that you can use now or freeze for later.
