Ingredients to make 1 Quart Approx.
1
Kilo/2.2lbs. of fresh
Mediterranean tomatoes
chopped, or 2 Sixteen ounce
cans of whole plum
tomatoes in juice
1 Large onion -
chopped
6 Cloves of
garlic - chopped
1 Lemon
- juice of
1 pint of good vegetable stock or 1 vegetable
stock cube dissolved in a pint of water.
A bunch of fresh basil leaves or 1 tablespoongood quality
dried basil
2 Tablespoonsfresh parsley
1 box of Spanish Tomate Frito(400g) or 3
Tablespoonsdouble
concentrate tomato puree
3 Tablespoonsextra virgin
olive oil
3Bay
leaves
Salt and freshly
ground black pepper to taste

- First fry off your onion in a medium
saucepan with
the olive oil, over a medium heat until soft.
Then - reduce the heat and add the garlic.
Cook for a further five minutes stirring.
Add the chopped fresh tomatoes to the mix - or:
Open the cans of tomatoes and pour the juice
into your mixture.
Roughly chop the tomatoes in the can with a
sharp knife.
Now add them to the pan.
Add the rest of the ingredients and cook at a
simmer for 30 minutes, stirring occasionally.
Take out the bay leaves and discard.
Next we need to blend
the cooked tomato mixture into a sauce. It's really easy with a stick
blender
as you can do this in the pan. Or you can use a food
processor....either way
whizz it until it is almost but not quite
smooth. It's good to leave some texture in it.
That's it - Great Tasting Tomato Sauce
that you can use now or freeze for later.
