Homemade tomato sauce Ingredients to make 1 Quart Approx. * 1 Kilo/2.2lbs. of fresh Mediterranean tomatoes chopped, or 2 Sixteen ounce cans of whole plum tomatoes in juice * 1 Large onion - chopped * 6 Cloves of garlic - chopped * 1 Lemon - juice of * 1 pint of good vegetable stock or 1 vegetable stock cube dissolved in a pint of water. * A bunch of fresh basil leaves or 1 tablespoon good quality dried basil * 2 Tablespoons fresh parsley * 1 box of Spanish Tomate Frito(400g) or 3 Tablespoons double concentrate tomato puree * 3 Tablespoons extra virgin olive oil * 3 Bay leaves * Salt and freshly ground black pepper to taste Method 1. OK - First fry off your onion in a Medium Saucepan with the olive oil, over a medium heat until soft. 2. Then - reduce the heat and add the garlic. 3. Cook for a further five minutes stirring. 4. Add the chopped fresh tomatoes to the mix - or: 5. Open the cans of tomatoes and pour the juice into your mixture. 6. Roughly chop the tomatoes in the can with a sharp knife. 7. Now add them to the pan. 8. Add the rest of the ingredients and cook at a simmer for 30 minutes, stirring occasionally. 9. Take out the bay leaves and discard. 10. Next we need to blend the cooked tomato mixture into a sauce. It's really easy with a Stick Blender as you can do this in the pan. Or you can use a Food Processor....either way whizz it until it is almost but not quite smooth. It's good to leave some texture in it. 11.
