Easy Healthy Tagine Recipe Ingredients for Two People * 2 Chicken legs and wings or 450g./1lb. of beef or lamb. * 300g./12ozs. of sweet potatoes in 1"/2.5cm. cubes. * 125g./4.5ozs. of couscous. * 1 Onion - roughly chopped. * 200g./8ozs. of Spinach roughly chopped * 2 Cloves of garlic finely chopped. * A handful of sultanas. * One lemon in quarters (preserved lemons are better) * 3 Tbls. of good olive oil. * A 142ml/5flozs./1/2 a cup of white wine and the same of chicken stock - or use water and a stock cube. * A handful of chopped coriander leaves to garnish. For the spice mix - all Ground together in a spice or coffee grinder. * 2 tsps. of cumin seeds * 2 tsps. of coriander seeds * 2 small dried chillis * A 3"/7.5cm Stick of cinammon * 1 tsp of turmeric * 1 tsp. of salt. Tagine Recipe Method 1. OK - put everything but the meat and spices into your tagine. 2. Add half the spice mix and stir well. 3. Rub the rest of the spices into your meat. 4. Arrange the meat on top of the vegetable mix. 5. Put the lid on your tagine and place in a preheated oven at 350ºf./180ºc. for 1 hour 30 minutes. 6.
