Grilled Shrimp Recipe Grilled Shrimp Recipe Ingredients For 2 People * 800g Shell on Large Prawns, Uncooked * 2 Cloves garlic, crushed * 2-3 Dried chillis, crumbled * Juice and zest of a lime * A handfull of fresh coriander, chopped * 4 Tablespoons extra virgen olive oil * Salt and Ground Black Pepper to taste You also will need 4 x 8" wooden skewers Grilled Shrimp Recipe Method 1. Shell all but 2 of the prawns...these will be used to garnish the finished dish. 2. Make the marinade by combining all of the other ingredients together evenly in a large bowl, just keeping a little of the chopped coriander back for the garnish. 3. Add the shelled prawns and mix them well into the marinade. 4. Cover and leave for at least 1 hour. 5. Now thread the prawns neatly onto the skewers....approximately 5 on each stick. 6. Pour the remains of the marinade into a baking tin with sides and place in a warm oven to heat slightly. 7. Put your griddle on to a high heat and first grill the 2 shell on prawns for about 2-3 minutes on each side. Put to one side. Then cook the skewered prawns on one side for no more than 2 minutes, then turn them over and cook for another 2 minutes only. 8. Take off the heat and place the skewered prawns into the tin containing the warmed marinade, turning them over a few times to pick up the juices. 9. Serve immediately on a bed of shredded lettuce, with the extra warmed marinade poured over them. Garnish with the shell on prawn, tomato, coriander and lime wedges.
