Onion Soup Recipe Onion Soup Recipe Ingredients for Four People * Two large onions finely sliced. * 2 cups/250ml vegetable or beef stock - or use a good quality stock cube. * 1 tsp. of brown sugar. * 1 glass - 125ml of red wine. * 1 measure of brandy (to flambé). * 1 tsp. of herbes de Provence. * 4 slices of stale bread. * 4ozs/100g. of strong cheese - grated * 1 oz/25g. of Parmesan - grated * 1 tbls. of plain flour * 2 tbls. of Olive oil. * 1 oz./25g. of butter. * Salt and pepper. Onion Soup Recipe Method 1. Heat the oil and butter in a pan and add the onions and sugar. 2. Cook on a medium heat until the onions are golden brown. 3. Pour in the brandy and flambé, stirring until the flames go out. 4. Add the plain flour and herbes de Provence and stir well. 5. Now add the stock and the red wine - bit-by -bit, stirring as you go. 6. OK - check for seasoning and let it cook for about twenty minutes, adding a little water if it becomes too thick. 7. Ladel the soup into earthenware bowls. 8. Place your rounds of stale bread on top. 9. Then the strong cheese. 10. And finally the Parmesan. 11. Pop the bowls under a hot grill and grill until the cheese is all melted and crunchy on top. 12. Serve immediately - and enjoy. ....
