Marinated Chicken Recipe Marinated Chicken Recipe Ingredients For 2 People * 2 Chicken legs with the wings separated, skinned and scored (See photo) * 1 x 4oz/ 125g Greek Yogurt * 2 cloves of garlic, finely chopped * Juice of 1 lemon * 1/2 medium Red Pepper finely chopped * 2 Teaspoons Paprika * 2 Teaspoons Comino (Cumin) * 2 Teaspoons Chilli * 1/2 Teaspoon Spanish Colorante, or Turmeric or yellow food colouring (2 drops) * Salt and Black Pepper to taste Marinated Chicken Recipe Method 1. This is really easy! In a mixing bowl combine the yogurt, garlic, lemon juice,red pepper spices and food colouring, if you are using it. 2. Season with salt and black pepper 3. Add the chicken legs and wings and mix them well into the marinade. 4. Cover and leave for at least 2 hours....longer if possible. 5. Now arrange the chicken on a rack over a roasting tray of water (see photo). 6. Roast at 180ºC/350ºF and after 20 minutes turn the chicken over and roast for a further 20 minutes. 7. Whilst they are cooking you can top up the water in the tray as it evaporates. 8. To make the sauce: just pour the marinade that is left into a small saucepan and bring it to the boil over a medium heat. 9.
