Fish Pie Recipe Ingredients For 2 people * 200g./8ozs. of firm white fish - the smoked haddock gives a great flavour. * 200g./8ozs of large raw prawns/shrimp shelled and de-veined. * 450g./1lb. of mashed potatoes. * 1 Medium sized Courgette/Zucchini cut in 1/2" cubes. * 2 Cloves of garlic - chopped. * 50g./2ozs. Of roasted red bell pepper chopped - you can buy it in a jar. * 1 Glass of dry white wine - 125ml. * 1 Large glass of fish stock - 250ml. * 1 Glass of single cream - 125ml. * 1tsp. Of Cornflour/cornstarch - slaked in a little water. * 50g./2ozs. Of Parmesan cheese - finely grated. * 25g./1oz. Of wholemeal breadcrumbs. * 1 Heaped tsp. of dried dill. * Olive oil to fry. * Salt and freshly ground black pepper to taste. Fish Pie Recipe Method 1. O.K. This is really easy - Line a good sized earthenware casserole with your potato and keep it warm in a low oven. 2. Meanwhile mix all your liquid together and add the garlic. 3. Bring to the boil and cook gently for ten minutes. 4. Meanwhile - briskly fry the courgette/zucchini in a little olive oil allowing it to brown. 5. Add the fish, prawns, red pepper and dill to the liquid and bring back to the boil. 6. Cook until the fish is firm and the prawns/shrimp turn pink. 7. Remove the fish and prawns and keep warm. 8. Now - arrange the fish, prawns and courgettes/zucchini on top of the mashed potato. 9. Thicken the sauce with the cornflour/cornstarch adjust for seasoning and spoon it over the top. 10.
