Chocolate Mousse Recipe Ingredients for Six People 200g of 74%(minimum)cocoa solids dark chocolate 4 large eggs seperated 1 tablespoon brandy....or tia maria or cointreau 2-3 tablespoons hot water Chocolate Mousse Recipe Method 1/. Break up the chocolate into small pieces and place into a large heat proof bowl over a pan of simmering hot water. Make sure the bowl is not touching the water. 2/. Stir until the chocolate has completely melted. 3/. Remove from the heat and put to one side. 4/. Meanwhile using an electric hand whisk beat up the egg whites until they form soft peaks. 5/. Gradually add the brandy or liquer and the hot water to the melted chocolate stirring really well. If the mixture is still very thick add a little more hot water to thin it down a little. 6/. Stir in the egg yolks. 7/. Carefully fold in the egg whites using a large metal spoon...try to keep as much air in the mixture as possible. 8/. When all the ingredients are evenly combined divide between 6 glasses. 9/. Put into the fridge to set.
