Stuffed Peppers Recipe

Healthy - Quick and Easy Red Pepper
This delicious stuffed peppers recipe is just about the healthiest
thing you could eat. The red bell peppers are stuffed with antioxidant
vitamins A, C and K, which help support the immune system and protect
from cancer and heart disease.
The tomatoes also contain vitamins,
potassium and iron, along with lycopene which is known to protect
against prostate cancer. The good news is that cooking brings out even
more of the medicinal qualities of tomatoes. Garlic has a long list of
plus points regarding health and of course, olive oil is bursting with
those good monounsaturated fats.

Ingredients
for Four
2 Medium sized
Red Bell Peppers.
- 4/6 fresh tomatoes.
- 2 large cloves of garlic.
- 1/2 a Moroccan preserved lemon or the
juice
and zest of 1/2 a fresh one.
- 6 Fresh basil leaves or 1/2 tsp. dried.
- Plenty of good quality olive oil.
- A handfull of wholemeal breadcrumbs.
- Salt and freshly ground black pepper to taste.
Method
OK this is the really easy bit.

- Cut the Peppers lengthways through the stem and
lay them out on a baking tray.
- Now - roughly chop the tomatoes, garlic, lemon
and basil leaaves and mix them in a bowl.
- Season with salt and black pepper.
- Fill the Peppers with the mixture.
- Top with a generous amount of breadcrumbs.
- Glug on some olive oil.
- Right - bake in a moderately hot oven at
400ºf./200ºc Gas mark 6 for about thirty minutes.
