Souvlaki Recipe
Here's a great souvlaki recipe made with tender
pork loin marinated in
great red wine and olive oil with Greek herbs and garlic.
Slouvaki - literally little skewers in Greek can be found almost
everywhere in Greece and, along with tzatziki and pitta bread makes a
healthy and affordable form of fast food.
The secret is in the marinade, so just follow the step-by-step
instructions and you can be eating Mediterranean, Greek food tonight.

Souvlaki
Recipe Ingredients for four people.
- 1 Kg./2.2lb. of lean pork loin cut into
2.5cm./1" cubes.
- Eight x 6"/15cm. wooden skewers.
For
the Marinade
- 4 tbls. Good olive oil
- 4 tbls. Red wine
- 2 tbls. Lemon juice
- 2 Large cloves of garlic crushed
- 1 tbls. dried mint
- 1 tbls. dried oregano
- 1 Bayleaf crumbled
- Salt and freshly ground black pepper to taste
- Lemon for serving

Method
Souvlaki
Marinating
- This
is really easy.
- Whisk
all your marinade ingredients together in
a glass bowl and add the meat, mixing well.
- Cover with cling and leave to marinate for at
least three hours, overnight is ideal.
- Thread the meat onto the wooden skewers - you
should have about 4 pieces per skewer.
- Now grill ony way you prefer - charcoal is
great, or gas.
- Grill until well browned on all sides and serve
with our tzatziki fresh
salad and pitta
bread.
