Grilled Fish Recipe
You'll see
variations of this grilled fish recipe all around the Mediterranean and
using a variety of fish. We're using the very popular Rosada found
frozen
everywhere in Spain.
It's a great fish for grilling, having really firm white flesh that can
withstand the pretty rough treatment meted out to it in some Spanish
establishments.
You can also use more traditional Mediterranean fish for this recipe,
such as Sea Bass "Lubina" or Gilthead "Dorado".
It's really simple and easy to cook and is a great flavour experience,
absolutely perfect for your own Mediterranean
Diet.

Grilled
Fish Recipe Ingredients
For 2
People
- Approximately 1 lb / 450g rosada
fillets
- Extra virgin olive oil
- Salt and black pepper to taste
- 2 cloves of garlic, finely chopped
- Juice of 1 lemon
- A handfull of chopped parsley
- A knob of butter or 2 tablespoons olive oil

Fish Recipe Method
- This is really quick and easy! Place the rosada
fillets into a bowl and season them with salt and black pepper and add
sufficient olive oil to thinly coat each fillet. Make sure that this
simple marinade is evenly mixed over each fillet. Allow to rest for an
hour.
- Place a non stick fry pan on a high heat and
allow to get very hot.
- Place the fish fillets directly into the pan
and sear first on one side, approximately 2-3 minutes, turn over when
browned and sear on the other side until browned. (2-3 minutes)
- Remove the fillets from the pan and keep warm.
- To make the sauce: place the pan back on to a
medium heat, add the garlic, being careful not to allow it to brown
(turn the heat to low if necessary) cook for 2-3 minutes, add the lemon
juice and the parsley and bring to the boil.
- Whisk in the butter......or the olive oil.
- Arrange the fish on plates and pour the sauce
over.
- Serve immediately with potatoes and vegetables
of your choice.
