Fresh Pasta Recipe

Fresh Pasta Recipe

Pam's Quick and Easy Hand-Made

Spaghetti, Lasagne and Tagliatelli.

Simple - Basic - Fresh Pasta Recipe.

We all know what its like to boil up dried Spaghetti and  other commercial pastas, and the results can be very good indeed if you follow the instructions on the packet. But if you'd like to try making your own, here's Pam's quick and easy  - tried and tested recipe.
Just follow her step-by-step instructions and you'll soon be making great homemade pasta and be the envy of family and friends.

Ingredients for 4 People

  • 450g. Flour - we use ordinary plain flour.
  • 4 Eggs
  • 1 Teaspoon of salt
 Method
  • Place your Flour in a large Bowl
  • Make a hole in the flour and add the Eggs and Salt.
  • Now knead the Eggs into the flour until all the flour is used up.
Kneading the PastaRoll out the Pasta
  • Let it rest for at least an hour.
  • Then roll out the pasta by hand.
  • You can carry on doing it by hand but it's much easier with a hand pasta rolling machine. Here's the one that Pam recommends:

Into the Pasta MachineProgressively Thinner settings
  • Run it through the machine at the widest setting
  • Then progressively thinner settings.
Spaghetti CutterFresh Spaghetti
  • Next run it through the cutter of your choice - in this case spaghetti.

You can let it hang from any kind of rail until you're ready to cook it.

Spaghetti only takes about a minute in plenty of boiling water.
