Fettuccini Alfredo Recipe
We designed this Fettuccini Alfredo recipe specially for all of us who
want to lose weight using the principles of the Mediterranean diet.
We have taken out most of the butter and cream - a great source of
saturated animal
fat - and used low fat creme fraiche. The parmesan cheese has also been
reduced....but the finished result is really delicious. This dish
really hits the spot if you want something slightly indulgent to lift
your spirits.
Not to be eaten every day...but perfect for an occasional treat, and
soooo much more healthy than the original recipe. Great for
vegetarians.

Fettuccini
Alfredo Recipe Ingredients
For 2 People
250g fettuccini, home made or dried.

Its great fun to make your own. We have been using this little pastamachine
for years with great success.
2oz / 50g butter
1 small onion, finely chopped
2 fat cloves of garlic, finely chopped
8oz / 225g low fat creme fraiche
4oz /100g finely grated parmesan
1/4 teaspoon freshly grated nutmeg, or dried
Salt and ground black pepper to taste

This is really quick and easy! If you are using
dried
pasta cook according to the instructions on the packet. Fresh pasta
fettucini only takes 2 minutes to cook so leave that till you have your
sauce ready.
In a small pan melt the butter and add the
olive oil, over medium heat.
Add the onion and saute until translucent,
about 2-3 minutes, then add the garlic. Turn down the heat so they are
just simmering.
Cook for a further 3 minutes, until softened.
Add the creme fraiche and stir until heated,
then
add the nutmeg.
Put the sauce to one side and cook the fresh
pasta now or have the cooked dried ready to use.
Drain the water from the pasta keeping a little
back in a small bowl.
Put the pasta back into it's cooking pan and
pour in the sauce, also adding the parmesan a little salt and black
pepper.
Give the whole thing a really good stir, we
usually use 2 wooden spoons, until the sauce and cheese are well
combined.
If you think that the sauce is too thick just
add a little of the hot water you put to the side, just to thin it down
slightly.
Serve your Fettuccini Alfredo Recipe in warmed
pasta
bowls
sprinkled with
parsley.
