Healthy Fresh Italian - Mediterranean Food

We love this Chicken Parmigiana Recipe, and can happily eat it any time we like with a clear conscience.
We've taken out all the breadcrumbs and flour and eggs and simply marinate the chicken, dry fry it - top with our own delicious tomato sauce  and freshly grated cheese then finish under the grill.
Easy, quick and economical, with all the great Mediterranean flavours you could  ask for. A great Mediterranean Diet dish.

Great Chicken Parmi

Ingredients for Four People
  • Four medium chicken breast fillets
  • 50g. about 2ozs. each of strong Cheddar cheese and Parmesan
  • Three or four Tbs. of good olive oil
  • One cup - about 8ozs. Fresh tomato sauce
  • OR a good shop bought one if you are short of time
  • Two teaspoons of dried oregano (origanum)
  • Salt and freshly ground black pepper to taste

Method
  1. Trim the chicken breasts of any fat or gristle and marinate them in some of the olive oil with the oregano a little salt and freshly ground black pepper for half an hour.
  2. Meanwhile grate the cheese coarsely and pop it in the fridge.
  3. Heat your tomato sauce and keep it warm.
  4. Now - dry fry the chicken breasts in a non stick fry pan (or grill them). About 6 or 7 minutes on each side.
  5. Place the chicken breasts on to a baking pan.
  6. Spoon some of the tomato sauce on to each fillet, top with the cheese (cheddar first and parmesan on top) and finish under the grill until golden brown and bubbling.
  7. Serve on warmed plates with a fresh green salad.
