Making your own pasta does take a bit of work, but I'll guarantee that
once you've made spaghetti or tagliatelli yourself, you'll never
go back to the bought stuff again. If you are rushing and short of
time, just use a good quality dried one.

Here's the hand pasta rolling machine that we
been using for years.
Bring
a large
saucepan of water
with plenty of
salt
to the boil and let it simmer while you prepare the sauce.
Meanwhile, cut the pancetta into lardons (short
little strips).
Heat a large
non stick fry pan over a
medium
heat, add the olive
oil and the pancetta and fry
until lightly golden.
Add the garlic and parsley and cook for a few
seconds, then remove from the heat and set aside.
Now place your spaghetti
in the boiling water - bring back to the boil and cook for one minute -
Yes one
minute. If you're using dried pasta - follow the
instructions on the packet.
Drain the spaghetti well, tip into
the frying
pan
with the pancetta, garlic and parsley, add the beaten eggs and half the
grated cheese and toss together well.
Season to taste with a little salt and black
pepper.
The heat from the spaghetti will be sufficient to partly cook the egg,
but still leave it moist and creamy.
Take to the table and serve in warmed pasta
bowls,
sprinkled with the rest of the cheese.
