A good
Bolognese sauce
recipe is essential for every cook and
this one has served us well over the years. It brings great Italian
Mediterranean flavours to any pasta dish. The secret is in the
ingredients, always use the best quality ingredients you can find, it
pays dividends in the long run.
The other secret is, of course, the cooking.
Don't be afraid to let it
cook for a long time. It is one of the few things that we will cook in
a pressure cooker. We can't emphasise this enough -
Bolognese Beef Sauce can be cooked and cooked and then cooked some more
and it will just get better
and better.
Experiment with different additions as you go
along, find your own special version. You can add Finely chopped
Carrots, Celery, Bacon or Ham - Some people even like to add Chicken
Livers for added flavour.
One particular favorite of ours is to add half a
pint of Creamy Bechamel and half a pound of sauteed mushrooms to
the
basic sauce: fantastic with any Pasta you Like.

Ingredients
1lb.
ground
beef
1 Large onion
finely chopped
2 cloves of
garlic mashed
1 x 16oz. Can of
chopped tomatoes
2ozs. strong
tomato paste
2 beef
bouillon cubes
1/4teaspoon
dried chilli powder
1 lemon -
juice and grated rind
A glass of red
wine
1 Teaspoon
each of dried thyme
and marjoram
1 Tablespoon
of olive oil for
frying
