Bean Salad
Recipe From The Mediterranean
I use this bean salad recipe for parties and barbecues...it's very
easy, healthy,
pretty, and really delicious. A great vegetarian recipe on its own, but
we often add tuna, chicken, prawns or anything that may
take our fancy. It makes a great hassle free lunch dish. Just
halve the
recipe for 4 servings.

Ingredients
for 8/10 people
- 400g/14oz can cooked chick
peas
- 400g/14oz can cooked kidney beans
- 400g/14oz can cooked butter beans
- 400g/14oz can cooked lentils
- 1 small onion chopped finely
- 2 fat cloves of garlic crushed
- 4 tomatoes in small dice
- 1 handfull of parsley chopped finely
- 6 fresh basil leaves chopped or 1 tsp dried
- 1 fresh chilli chopped finely or 1 tsp dried
- A good pinch of salt
- Ground black pepper
- 150 ml/1/4pt vinaigrette
dressing.

Salad Recipe Method
- Open - drain and rinse through your
beans.
- Combine all of the ingredients in a large bowl
and mix until
evenly incorporated.
- Cover and refrigerate until required.
- Serve garnished with salad leaves.
- And plenty of crusty
bread.
And there you have it - great Mediterranean diet food that's really
good for you and so easy to make.
