Mediterranean Chargrilled Marinated 

Pork Fillet - Tenderloin

Here's a great BBQ pork recipe that's easy, quick, healthy and totally foolproof. Pork fillet/tenderloin is very healthy because it is virtually fat free. That also makes it dry out easily if it's overcooked. So, just be careful not to overdo it, you're better off to leave it a little pink inside than to dry it out :)
Pam's Tips: Marinate your pork fillet well in advance and don't make your heat too fierce - the flavours are quite subtle.

BBQ Pork Recipe

BBQ Pork Recipe Ingredients for Two People


One large pork fillet/tenderloin of about
1-1/2 lb./700g. Trimmed of all fat and sinew, cut in two and beaten flat.
For the Marinade
  • 4 tbs. Good quality olive oil.
  • 2 Plump cloves of garlic - bashed and chopped.
  • 2 tsps. toasted cumin seeds - ground.
  • 1/2 of one star anise ground.
  • 1 tsp. turmeric powder.
  • 1 tbs. Honey.
  • 1/2 A lemon - juice of.
  • Salt and freshly ground black pepper.
For the Sauce
  • 1 Cup - about 8ozs. of fresh tomato sauce.
  • 1 Clove of garlic roughly chopped.
  • 1 Dried chilli or 1/2 tsp. chilli flakes.
  • A good dollop of honey.
  • An equal amount of lemon juice or white wine vinegar.
  • Olive oil to fry.

Method                                            

BBQ Pork Fillet
  1. Put all the marinade ingredients in a large shallow dish.
  2. Add the pork fillet and marinate for at least an hour, turning two or three times.
  3. Meanwhile make the sauce:
  4. Toast the garlic in olive oil until nut brown and crispy.
  5. Quickly add the honey, lemon juice and chilli and stir for two minutes.
  6. Take the pork from the marinade and add any remaining marinade to your  sauce.
  7. Grill the pork until browned and crispy on the outside and still pink and moist inside.
  8. Spoon the sauce onto warm dinner plates and arrange the pork on top.
