Albondigas - Spanish Meatballs


Albondigas - Perfect Spanish Meatballs

In Fresh Tomato Sauce


You'll find Albondigas wherever you go in Spain. Made with Pork and Beef, Turkey and Ham. In tomato sauce, in gravy, even in a kind of Spanish curry sauce: tastier than it sounds. In the interests of Healthy Eating we have made ours from minced lean chicken. We mince our own but you can use any good quality mince. The most common type found in Spain is a mixture of Pork and Beef.
The main thing is that they taste great and make a great snack or Tapa for any time of the day. Specially in our own fresh  homemade tomato sauce.

Ingredients to make 20 Approx.
  • 1 lb. Of ground or minced chicken
  • 1 Fresh egg.
  • 1 Medium onion finely chopped
  • 1 Clove of garlic finely chopped.
  • 1 heaped Tsp. of dried Thyme.
  • 2 ozs. of fresh wholemeal breadcrumbs.
  • Salt and freshly ground black pepper to taste.

Albondigas - Tapas
Method

  1. First put all the ingredients into a bowl and mix well - I like to use my hands.
  2. Then - shape the meatballs with your hands. Roughly 20 for this recipe.
  3. Arrange them on an oiled baking tray.
  4. Bake in the oven for 15 minutes at 300ºf./150ºc
  5. Let the Meatballs cool and then add 1/2 a pint of:
  6. Fresh Homemade Tomato Sauce.
  7. Reheat and SERVE.

That's IT - couldn't be Easier.
